HOME-MADE EASY AND TASTY VANILLA SPONGE CAKE

In this world, we are always fighting stress good or bad, healthy or
unhealthy, and what we put our hands on in our kitchen is
going to affect the mood and fulfillment of our stomach and cravings.

So in a few years, I have learned sweet tooth or not-so-fond of sweet stuff, we
still sometimes urge to have something really sweet and soft like this

Sponge Cake which is in our hand to bake at any odd times when we run
out of cookies, ice creams, or chocolates. So learn to bake it in just a few minutes.

Ingredients

Maida ( White Flour) 1 cup (250 grams)

Powdered Sugar  – 3/4 cup ( 175 ml )

Cooking Oil – 1/2 cup ( 125 ml )

Vanilla Essence – 1/2 tsp

Curd – 2 tbsp

Baking Soda ( Meetha Soda )- 1/4 tsp

Baking powder – 1 +1/4 tsp

Milk Powder – 2 tbsp

Milk – 1 cup approx

Cake Tin To Bake

Now Let’s Start

Preheat the Oven to 180 degrees for 10 minutes.

Take a big bowl and add Sugar and Oil. Start mixing it with a hand whisk or an electric beater. Keep doing this till the time the color of the mixture changes, it will take 10-12 minutes using a hand whisk and just 4-5 minutes with a batter beater. This step is creaming.

After 10 minutes you will see the mixture will become slightly fluffy.

Now Add Curd and mix it properly for half a minute.

Add Vanilla Essence and mix well using the whisk.

NOW

Take a Sieve and put it over the bowl of the above sugar and oil mixture.

Put Flour on it, Baking Soda, Baking Powder, and Milk Powder and mix the dry ingredients as they mix well when they are dry. Now tap the strainer gently so that the dry ingredients gradually sift through it into the bowl.

Now take a Spatula and start mixing it so that no lumps are formed. Mix it for just 2 to 3 minutes.

Take warm milk and start adding it to the above mixture pouring a little at a time. Mix it adding more milk a little at a time and make a paste. The batter should be in flowing consistency.

Take a cake tin and grease it with oil using a brush. Then Put a Parchment Paper used for baking. Cut the paper according to the base of your tin.

Pour the batter into the tin and Tap the tin thrice so that the batter settles in the tin evenly.

Now Put it in the oven on the third shelf for 20 minutes at 180 degrees temperature.

After 20 minutes just check the cake by putting a sharp knife straight into the cake and take it out. If you see the batter on the knife then it still needs 5 minutes more so keep it back for 5 minutes as it’s different with all the ovens.

Then before taking it out check again and if the knife comes out clean your cake is ready.

Take it out and let it cool for 5 minutes. Then roll the knife around the tin and by keeping a plate on the top, flip the tin upside down. Then again put a tray and flip it. The front side of the cake will come on the tray.
