BAINGAN ALOO ( BRINGLE & POTATO MASALA )
Ingredients
250 gm Brinjal (Baingan) small size
1 medium-sized potato peeled and cut into pieces
1/2 tsp Salt
1/4 tsp Red Chilly powder
1/4 tsp Turmeric (Haldi) powder
1 tsp Dhania Powder
1/2 tsp Garam Masala
2 to 3 tsp cooking Oil
Let’s Start
Mix Salt, Red chilly powder, Turmeric powder, Dhania Powder, and Garam masala in a bowl
Make a slit on the Brinjal from the center and fill it with the above ingredients which you mixed in the bowl
Take a Wok ( kadhayi )
Add cooking Oil and then add potatoes and Brinjal.
Also, add leftover masala and stir properly so that the masala is coated on the brinjal as well as the potatoes.
Just give a sprinkle of water and cover it
Keep it on a low flame
Keep stirring it after intervals of 10 minutes till it gets soft and check the potatoes also if they are soft and done.
Serve it with Chapati.
