 HOME MADE PASTA IN WHITE SAUCE

 

 

 

WHY ARE THE FAST FOOD JOINTS FAMOUS?

ITS THEIR READY TO EAT FOOD IN A VERY LESS TIME SO THAT THE FAST FORWARD LIFE COULD COPE UP WITH ITS HUNGER NEED IN A VERY LESS TIME WITH A GOOD TASTE.

SO IF WE CRAVE TO EAT YUMMY PASTA LIKE YOUR FAVORITE JOINT , HERE IS THE RECIPE YOU MUST TRY AT HOME.

Ingredients

250 gm Penne Pasta
1 Litre Water to boil Pasta
Salt 1 tsp
Pepper half tsp
Some Oregano’s
Some Mixed herbs
Some Chilly flakes
2 medium Onion finely chopped
1 Cup Carrot finely chopped
1/2 Cup Capsicum finely chopped
1/2 Cup Bells and Pepper (Red Yellow Capsicum)
Half Cup Boiled Sweet Corn
6 -7 Garlic finely Grated
FOR SAUCE 
500 ml Milk
3 tbsp Butter
3 tbsp Maida (White flour)
NOTE- BUTTER AND MAIDA (White Flour)SHOULD BE EXACTLY OF SAME QUANTITY.
Processed cheese little
1 Tsp Fresh Cream

LETS START

TAKE A PAN 

ADD 1 LITRE WATER 

ADD 1 TSP SALT

AND LET IT BOIL THEN ADD PENNE PASTA

LET IT COOK ON HIGH FLAME FOR 10 MINUTES TILL ITS SOFT AND COOKED 80%
TAKE OUT 1 SMALL BOWL OF BOILED WATER FROM THE PASTA AND STAIN REST OF THE WATER.

NOW WASH THE PASTA WITH COLD WATER KEEPING IT ON THE STRAINER.

NOW  TAKE A NON STICK PAN 

ADD OIL HEAT IT FOR 2 MINUTES 

THEN ADD GARLIC , SAUTE WELL FOR 1 MINUTE , THEN 

ADD ONION AND FRY IT FOR 5 MINUTES ON MEDIUM FLAME TILL ITS PINK N SHINNY.

NOW ADD CARROTS AND FRY THEM WITH ONION TILL ITS SOFT.
THEN ADD CAPSICUM ( GREEN, RED AND YELLOW ) AND SAUTE FOR 5 MINUTES. 

KEEP STIRRING IT. ADD CORN ALSO.

AND YOUR VEGETABLES FOR YOUR PASTA ARE READY.

NOW TAKE A BIG UTENSIL (KADHAYI ) OR A BIG PAN

KEEP IT ON LOW FLAME AND ADD BUTTER,  MELT IT (DO NOT MAKE IT BROWN)
ADD MAIDA (WHITE FLOUR) EXACTLY SAME QUANTITY AS OF BUTTER.

KEEP STIRRING IT ON LOW FLAME TILL YOU GET NICE AROMA OF WHITE FLOUR FRIED IN BUTTER.

NOW ADD LITTLE MILK AND USE WHISK, KEEP STIRRING IT SO THAT NO LUMPS ARE FORMED, KEEP ADDING MILK LITTLE AT A TIME AND MAKE A SMOOTH PASTE. KEEP STIRRING IT ON MEDIUM FLAME. 
NOW ITS TIME TO ADD THE PASTA WATER WHICH WE KEPT SEPARATELY AT THE TIME OF BOILING THE PASTA.

ADD PROCESSED CHEESE AND STIR WELL.

BOIL ON MEDIUM FLAME STIRRING IT CONTINUOUSLY,  THEN PUT A SPOON IN THE SAUCE, COAT IT WITH SOME SAUCE ON THE BACK SIDE OF THE SPOON MAKE A LINE ON IT, IF THE SAUCE DRIPS THEN IT NEEDS TO BE COOKED FOR SOME MORE TIME AND IF THE LINE REMAINS INTACT THEN ITS READY.
ADD ONE OR TWO PINCH OF SALT AND LITTLE PEPPER , SOME OREGANO , CHILLY FLAKES, MIXED HERBS. MIX WELL.
ADD COOKED VEGETABLES AND MIX IT. 
ADD PASTA AND MIX WELL.
ADD 1 TBSP OF FRESH CREAM TO GIVE IT A PERFECT TASTE OF RESTAURANT STYLE HOME MADE WHITE SAUCE PASTA.
SERVE HOT. 
IF YOU FEEL ITS THICK YOU CAN ADD WARM MILK AND SET THE CONSISTENCY ACCORDING TO YOUR CHOICE.
